Construction of the Bonnington distillery in Leith in Edinburgh was far from a simple process. As early as 2017, while initial excavations were taking place, the remains of an 18th century distillery and an 11th century townhouse were found, postponing any further construction for a year while archaeological surveys were completed. The distillery was eventually built in 2019, with distillation finally commencing in March 2020.

Undeterred by this inconvenience, Bonnington’s founders Halewood Spirits (owners of the historic Crabbie brand) set up the Chain Pier microdistillery in 2018 to experiment with different production methods while the Bonnington project was on hiatus. Chain Pier closed when Bonnington distillery was finally completed at the end of 2019; the new distillery’s inaugural release Bonnington Lowland single malt whisky was launched early in 2024.
