Tasmania Distillery was founded in 1994 by Robert Hosken in an old gasworks site in the bay of Sullivan’s Cove near Hobart. The Tasmania Distillery was a craft operation making Sullivan’s Cove whisky and various other spirits, but Hosken fell into financial difficulty and his business was taken over in 1999 by new owners who hired Bill Lark from Lark Distillery as their distillery manager.
Lark brought his friend Patrick Maguire with him from Lark Distillery and in 2003 Maguire bought Sullivan's Cove and moved the distillery to a new location in Cambridge near Hobart. Interest in Sullivan’s Cove skyrocketed in 2014 when one of their single cask bottlings won Best Single Malt Whisky at the World Whisky Awards. Tasmania distillery changed hands again in 2016 and was renamed Sullivan's Cove by the new owners, who are now planning on moving the distillery back to its original waterfront location.
Distillery bottlings are, as the name suggests, bottled by or for the distillery from which the whisky has originated and are thus often referred to as Official Bottlings or OBs. Distillery bottlings are generally more desirable for collectors and usually fetch higher prices at auction than independent bottlings. They are officially-endorsed versions of the whisky from a particular distillery and are therefore considered the truest expression of the distillery’s character.
This ideal of the distillery character is regarded so seriously by the distilleries and brand owners that casks of whisky that are considered to vary too far from the archetype are frequently sold on to whisky brokers and independent bottlers. When this happens, it is often with the proviso that the distillery’s name is not allowed to be used when the cask is bottled for fear of diminishing or damaging the distillery’s character and status.
