Waterford’s Pilgrimage is a landmark Irish single malt that marks the beginning of the distillery’s pioneering journey into terroir-driven whisky production. In 2015, Waterford transformed a state-of-the-art brewery into what it calls “The Facilitator,” an ultra-modern distillery dedicated to exploring the influence of barley provenance on flavour. The first spirit runs took place on 10th December 2015, followed by the distillation of exceptional 2016 harvest barley.
Believing that barley is king, Waterford meticulously distilled each farm’s barley separately, creating an extraordinary library of 36 individual single farm origin distillations. Bottled in 2020, Pilgrimage is the distillery’s first cuvée, bringing together these unique terroirs into one groundbreaking expression that celebrates innovation, provenance and the future of Irish whisky.
Waterford Distillery is an Irish single malt whisky producer located in southeast Ireland, they have gained significant recognition since being founded in 2015 by former Bruichladdich CEO Mark Reynier.
Operating out of a converted former Guinness brewery, the distillery is known for its unique, wine-inspired focus on agricultural origin and terroir. Through their Terroir Philosophy, Waterford isolates spring barley based on individual farms, soils, and microclimates, tracking the grain from harvest to bottle to showcase how specific land characteristics impact flavour. In terms of production style, they notably utilise double-distillation and use the "whisky" spelling without the 'e'.
Following financial turbulence and a period of administration in late 2024, the distillery was acquired by the US-based Tennessee Distilling Group in early 2026.
Distillery bottlings are, as the name suggests, bottled by or for the distillery from which the whisky has originated and are thus often referred to as Official Bottlings or OBs. Distillery bottlings are generally more desirable for collectors and usually fetch higher prices at auction than independent bottlings. They are officially-endorsed versions of the whisky from a particular distillery and are therefore considered the truest expression of the distillery’s character.
This ideal of the distillery character is regarded so seriously by the distilleries and brand owners that casks of whisky that are considered to vary too far from the archetype are frequently sold on to whisky brokers and independent bottlers. When this happens, it is often with the proviso that the distillery’s name is not allowed to be used when the cask is bottled for fear of diminishing or damaging the distillery’s character and status.
