Here's something you don't see every day - an indie bottling of long-aged, cask strength, sherry-matured Dalmore bottled without colouring or chill filtration! Cask 10133 was a sherry butt of Dalmore 1978 and was bottled in 1999 as a 20-year-old by Signatory Vintage at 56.6%. One of the Highland’s most famous and prestigious distilleries, Dalmore has for many decades been associated with Master Blender Richard Paterson, one of the whisky industry’s biggest personalities. The distillery has been part of blending giant Whyte & Mackay since 1960 and somehow flourished during that company’s turbulent decades of ownership change and management failure preceding the takeover by Filipino owners Emperador Inc. in 2014.
Dalmore has long been associated with sherried whisky, and the distillery’s spirit is capable of extended ageing, giving Paterson unrivalled long-aged stocks to work with. Consequently, Dalmore has consistently pushed the envelope for luxury single malt whiskies, bottling a 50-year-old single malt whisky in the 1970s and the famous Dalmore 64-year-old Trinitas, the first £100k whisky, in 2010 - both of which included small amounts of whisky distilled in the 19th century.
Signatory Vintage Whisky Company was founded by Andrew Symington in 1988 after a spell as assistant manager at the Prestonfield House Hotel, where he had the opportunity to buy a cask of Glenlivet 1968. A robust and canny businessman, Symington had soon acquired some outstanding parcels of casks from great distilleries, and quickly established a reputation among single malt fans for good value, high quality single casks, the majority of which were released at full strength.
Throughout the 1990s and beyond, Signatory released outstanding whisky from Ardbeg, Glenfarclas, Springbank and many more, with frequently remarkable examples of lost or obscure distilleries. Soon established as one of the leading new wave independent bottlers, Symington was also an early exponent of bottling whiskies without colouring or chill filtration, a policy that has also served Signatory well at their Edradour distillery, which was purchased in 2002.
